Founding partner of Spoleto, Eduardo Ourivio, 48 years old, began his journey well before
founding Brazil's largest Italian culinary network in 1999. He holds a degree in hospitality
from the Ecole des Roches in Switzerland. His first foray into the industry was at the age of
23 at the Alfredo di Roma restaurant, located in the Hotel Intercontinental in Rio de Janeiro.
In 1992, along with his partner and friend Mario Chady, he opened the Rio restaurant
"Guilhermina Café", which gained prominence in Rio's gastronomic scene.
